what elements of a full-fledged pizzeria were they missing?

They don't do slices. That's fine if you are going to be a real wood-fired pizza restaurant (which would be great to have), but the pizzas they serve aren't any better or different than a regular pizzeria.

Probably a better idea. Bakeries are definitely "in" now.  (Tho, of course, there's much competition in JH nowadays.)

a bakery that specializes in -- or at least offers -- bread would be especially welcome. Carollo, which was in the space later occupied by El Rico Tinto, had some good (not great, but hot and crusty) Italian and semolina loaves.

I saw them pushing in the kitchen equipment today. It seems like a small spot/kitchen to be making pastries and breads on site. I don’t think they have an exhaust system or ovens in place, so probably they will be getting their baked goods from Long Island city like the rest of the places in the neighborhood. Not that it’s a bad thing, but unfortunately, “ Homemade baked goods“ may be a thing of the past.
